Cookbook corner: Beef curry
When you think of cooking curry from scratch, some people automatically think it requires many spices and ingredients or is too complicated to contemplate. However, this beef curry is so delicious and actually pretty simple to create, requiring spices that many of us have in our store cupboards already or are easily available at the supermarket. The slow simmering of the dish also makes the beef really tender and melt in the mouth. This is sure to become one of your go-to dishes for any occasion.
Ingredients
2 tablespoons vegetable oil
500g diced braising steak
2 large onions chopped
2 garlic cloves, crushed
1 teaspoon ground cumin
2 teaspoons Marsala curry powder
1 teaspoon Garam Masala
400g can chopped tomatoes
1 can chickpeas
2 medium potatoes, peeled, diced and partially boiled
Little water
Salt
Pepper
Method
Heat oil in a saucepan over medium heat.
Chop and fry onions till soft and very starting to colour.
Season the beef with salt and pepper and fry in the saucepan for approximately 5 minutes or until the outer is no longer pink.
Add curry powder, cumin and garam masala then stir so all the ingredients are mixed together well.
Add the chopped tomatoes and chickpeas and stir together.
Finally, add the potatoes along with a little water if you need more liquid, then season with salt and pepper to taste.
Allow to cook and simmer on a low flame for approximately 40 minutes to 1 hour or until the meat is really tender.
Enjoy it with rice and some delicious coriander naan bread.
