Cookbook corner: Spicy chicken

Some people think of chicken as being more of the bland meats, but with some olive oil and spices, you can make it magnificent. This recipe gives the chicken a little kick and makes it taste delightful. Juicy meat with a lovely, tasty, crispy skin – perfect served with a fresh salad, corn on the cob, chips and coleslaw or even in a pitta for a tasty lunchtime alternative.

This recipe is for 10 people – use a large whole chicken or 10 individual chicken thighs depending on when and how you are serving this up.

Ingredients
2 cloves garlic
3 dessert spoons of mild curry powder
½ a teaspoon of ground cinnamon
¼ of a teaspoon of ground nutmeg
200ml of olive oil

Method
Mix the olive oil and all of the spices together in a bowl

Pour over the chicken and massage it in well.

Place the marinated chicken on to a roasting tray and cook in the centre of the oven at 200˚C (180˚C fan).

For a large chicken cook for approximately 1 – 1 ½ hours or 20minutes per lb (450g) +20 minutes.

For 10 chicken thighs cook for approximately 40 minutes.

Rest for 5 minutes or more before serving.
