Cookbook corner: Three layered chocolate mousse

We love chocolate and we love mousse and this recipe definitely ticks all the boxes when it comes to deliciousness! It also doesn’t contain any raw eggs so is perfect if you’re looking for an egg-free mousse. Serve with lashings of chocolate shavings, fresh whipped cream and even a raspberry or two. It’s so simple and is sure to look and taste the part whenever you choose to serve it up.

Ingredients
300g dark chocolate
300g milk chocolate
300g of white chocolate
3 x 250g mascarpone
3 x 600ml double cream
Chocolate for decoration

Recipe
Melt the dark chocolate in a double boiler. If you don’t have one, a heatproof bowl over a saucepan works as well, but make sure the bottom of the bowl doesn’t touch the water.

Once the chocolate has melted, whip 1 x 600ml of cream in a separate bowl till it begins to thicken, then add 1 x 250g of mascarpone and whip together till thick.

Add the melted chocolate to the cream mixture and once again, whip together.

Pour the dark chocolate mixture into the bottom of a large glass bowl or into individual glasses if preferred.

Repeat the process with the white chocolate and then pour over the layer of dark chocolate.

Finally, repeat the process again with the milk chocolate and pour that mixture over the white chocolate layer to create your three-tiered dessert.

Grate a mixture of dark and white chocolate over the top to give your mousse that finishing touch.
