Cookbook corner: Banana Loaf with Crumble

Bake this famous dessert with a cheeky PTG twist! Why does apple get to hog all the crumble? I say you should add it to all your favourites from now on. Serve this sweet loaf with ice cream double cream, maybe even butter? Let me know what you try it with in the comments!

Banana Loaf with Crumble

Ingredients
6oz / 170g of flour
6oz / 170g of sugar
6oz / 170g of butter, melted
3 x eggs
3 x really ripe bananas, mashed
200g chopped chocolate
200g sliced dates
400g Crumble Mix

Method

Preheat the oven to 180.

Throw your flour, sugar, butter and eggs into a mixing bowl and whisk for a minute until nice and thick.

Save a little bit of the melted butter for later.

Then, add your mashed bananas, chocolate and dates and whisk it up again.

Use that left over butter to lather up the non-stick bake tin on the base and sides before pouring in the cake mix.

Add a layer of crumble mix and spread over the top and sprinkle on some golden caster sugar.

Bake the loaf for 40-60 minutes.

When you think its cooked, poke a knife or skewer through the centre and make sure it’s clean when you take it out.

Serve and enjoy!
